The Holiday Bikini – The Method

WThis is a simplified take on a drink from the seasonal menu. It's a large-volume pre-mixed which is bursting with the flavours of a holiday season, which makes it excellent for your holiday party. Save the extra cordial for brunch beverages, puddings, or for another batch of bikinis.

The Bikini Cocktail

Makes enough for 10 servings

Ingredients for the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

For the Cordial: Place the listed ingredients into a pan, heat until it reaches a gentle boil, mixing so the sugar melts. Next, take off the stove allowing it to cool fully. Decant into a sealable bottle, cap it keeping it chilled, it can be stored for around four weeks.

Preparing the Cocktail Base: Combine the specified liquid ingredients into a sizeable container, allow it to infuse for one hour, then filter it best through a fine cloth, so it's completely strained.

When ready to serve: Measure 85ml of your batch mix into your cocktail shaker packed with ice, and stir gently for about 60 seconds until cold. Filter into a chilled martini glass or similar, decorate with some cranberries adding the final touch by giving it a quick spritz of the essential oil above the glass.
